{THE BRIEF}
The main all-day dining outlet of a resort was not holding up: queueing at peak, inconsistent quality across sittings, and a cost line that moved with waste rather than with covers.
The menu was only part of it. The concept had been designed without the kitchen flow, the buffet layout and the service pattern that had to carry it every day.
